The taste of summer in this quick Mediterranean salad.
Ingredients 4 cups mixed greens 1/2 cup cherry tomatoes 1 Armenian cucumber, sliced 1 yellow carrot, ribboned 1/4 cup ENZO Organic Bold Extra Virgin Olive Oil ENZO Traditional Organic Balsamic Vinegar 1/4 cup almonds, sliced and toasted 1/4 feta watermelon, sliced (for garnish)
Directions 1. Toss greens, cherry tomatoes, sliced cucumber, carrot ribbons and ENZO Olive Oil in a bowl. 2. Drizzle with ENZO Traditional Balsamic 3. Sprinkle almonds and feta over the top of the salad 4. Garnish with watermelon slices
