Roasted Acorn Squash

Ingredients

1 Acorn squash, washed and sliced
6 Tbsp. ENZO Organic Olio Nuovo
Salt and freshly ground pepper, to taste
Fresh Thyme
¼ Cup pomegranate seeds
¼ Cup fresh Burrata 

Directions

Step 1
Preheat oven to 400°F. Place sliced acorn squash on a greased baking sheet drizzled with olio nuovo, fresh thyme, salt and pepper. Bake for 20-25 minutes.

Step 2
Remove baking sheet from the oven and transfer squash to serving dish. Garnish the squash with pomegranate seeds, Burrata, drizzled Olio Nuovo, and salt and papper top taste.
