Ingredients
250 ml St. George Valley Gin
62.5 g ENZO Organic Meyer Lemon Infused Olive Oil
60 g ENZO'S TABLE Orange Blossom Honey
60 ml hot water
4 oz. lemon juice, freshly squeezed
4 lemon twist, optional garnish
3 drops ENZO Organic Meyer Lemon Infused Olive Oil, optional garnish
Directions
Step 1
Prepare the Olive Oil-Washed Gin:
Combine gin and Meyer Lemon Infused Olive Oil in a large container. Stir gently to mix, then cover and let it infuse at room temperature for 6–8 hours.
Step 2
Place the mixture in the freezer for 2–3 hours or until the olive oil solidifies. Strain the mixture through a fine-mesh sieve or cheesecloth to remove the solidified olive oil. Store the infused gin in a clean, sealed bottle.
Step 3
Prepare the Honey Syrup:
While the olive oil infuses into the gin,combine ENZO'S TABLE Orange Blossom Honey with hot water in a mixing bowl, stiring until honey is fully dissolved. Let cool and store in an airtight container in the refrigerator for up to 2 weeks.
Step 4
Combine Meyer Lemon Infused Olive Oil-washed gin, lemon juice, and honey syrup to a cocktail shaker filled with ice. Stir until well chilled and strain into a chilled glass.
Optional Garnish - Add a lemon twist and a drop of ENZO Organic Meyer Lemon Infused Olive Oil on top for a fragrant finish.
