Garlic Mashed Potatoes
2 Lbs. Yukon Gold Potatoes
¼ Cup ENZO Organic Garlic Infused Olive Oil
Salt and freshly ground pepper, to taste
Chives, for garnish
Bring water to a boil in a large saucepan. Add potatoes and 2 teaspoons salt and cook on simmer until potatoes are tender, ~15 minutes
Drain potatoes, reserving 1 cup of cooking liquid. Mash potatoes and add beat in olive oil and then thin to desired consistency with reserved cooking liquid. Add salt and pepper, to taste and garnish with chives.
