Ingredients 2 cups grain barley, cooked and cooled ½ cup cherry tomatoes 1 bulb fennel, thinly sliced 2 cups mesclun or young salad greens 1/4 cup ENZO Delicate Extra Virgin Olive Oil ENZO Traditional Balsamic Vinegar, drizzled 1 lemon, juiced Fresh parsley Salt & pepper to taste
Directions 1. Cook barley according to the package, allow to cool. 2. Add the tomatoes, mesclun, olive oil, balsamic vinegar and lemon juice. Toss to combine. 3. Add salt and pepper to taste. Serve with fresh parsley.
