Quick Pickled Shallots

Ingredients
¾ cup ENZO Organic Red Wine Vinegar
1 cup water
1 Tbsp. sugar
1 Tbsp. Kosher salt
2 bay leaves
2 tsp. peppercorns
6-10 shallots (depending on size), thinly sliced
Directions
Step 1
In a medium sauce pan combine wine vinegar, water, sugar, salt, bay leaves and peppercorns. Over medium heat, cook until sugar has dissolved.
Step 2
Once sugar has dissolved, add sliced shallots. Cook for 2-3 minutes and turn the heat off. Let the shallots cool completely in the pan on the stove. Once completely cooled, moved to an airtight container and store in the fridge.
