Market Barley Salad
2 Cups Grain barley, cooked and cooled
½ Cup Cherry tomatoes
1 Bulb fennel, thinly sliced
2 Cups Mesclun lettuce or young salad greens
¼ Cup ENZO Organic Extra Virgin Olive Oil - Delicate
ENZO Organic Traditional Balsamic Vinegar, for drizzling
1 Lemon, juiced
Fresh parsley, for garnishing
Salt & pepper, to taste
Cook barley according to the package, allow to cool. While barley cooks, slice fennel, wash greens and juice lemon.
In a bowl, combine tomatoes, fennel, mesclun, olive oil, balsamic vinegar and lemon juice and toss.
Add salt and pepper to taste. Serve with fresh parsley.
