Olive Oil Waffles
2 Large eggs
1¾ Cup Buttermilk
½ Cup ENZO Organic Extra Virgin Olive Oil
¼ Cup Almond flour
½ Cup Whole wheat flour
1¼ Cup All-purpose flour
½ Tbsp. Sugar
1 Tbsp. Baking powder
1 Pinch coarse salt
Wisk the eggs, buttermilk and olive oil together.
Stir in flours, sugar, baking powder and salt until well mixed. Cover with plastic wrap and refrigerate batter for at least 30 minutes before using (batter can be refrigerated for up to 3 days).
Preheat waffle iron and lightly grease if needed. Ladle in batter as appropriate for your waffle iron an cook until waffles are golden brown. Remove from iron.
Optional: Top with a soft scramble, proscuitto and a light drizzle of Organic Fresno Chili Crush Olive Oil
