Spiced Almond Apple Bread
⅓ Cup Maple syrup
½ Cup Plain greek yogurt
2 Tsp. Vanilla extract
1 Cup grated apples (1-2 apples depending on size)
¼ Cup Brown sugar
1½ Cup All-purpose flour
1½ Tsp. Baking soda
½ Tsp. Salt
½ Cup Semi-sweet chocolate chips
⅓ Cup ENZO’S TABLE Autumn Spice Almond Butter
2 Tbsp. Brown sugar
¼ Cup All-purpose flour
¼ Cup ENZO’S TABLE chopped almonds
2 Tbsp. ENZO Organic Extra Virgin Olive Oil
Flakey sea salt, to taste
Preheat oven to 350°F. While the oven preheats, grease a 9x5” loaf pan and line with parchment paper.
In a mixing bowl, combine maple syrup, greek yogurt, egg, vanilla, apples and sugar until well combined. Beat in flour, baking soda and salt until just combined. Fold in chocolate chips.
In a separate bowl, stir the streusel ingredients together until well-combined. Layer half the batter into a parchment-lined loaf pan. Add almond butter in dollops. Top with the remaining half of batter and streusel topping.
Place loaf pan on a baking sheet and set in oven. Bake for 50-60 minutes, or until center is set. If the top begins to brown (after about 45 minutes), tent the bread with aluminum foil. Remove and let cool for at least 30 minutes before cutting. Bread will keep (covered) for 3-5 days.
