Winter Berry Granola Crumble
NORMAL | 1.5 HOURS | SERVES 8-12
Ingredients
Fruit Filling
2 Lbs. (~4 to 5) Ripe Anjou pears, peeled, halved, cored and sliced ¼” thick
1½ Cups Fresh cranberries
½ Lemon, juiced and zested
1 Tbsp. Pure Vanilla Extract
½ Cup Granulated sugar
¼ Cup All-purpose flour
¼ Tsp. Kosher salt
Granola Topping
½ Cup All-purpose flour
1½ Cup Clovis Crunch Granola
¼ Cup ENZO Medium Organic Extra Virgin Olive Oil
¼ Tsp. kosher salt
2 Tbsp. Granulated sugar, optional
Directions
Step 1
Preheat oven to 350°F. While the oven preheats, grease a 1½ - 2 quart baking dish.
Step 2
In the baking dish, mix pears, cranberries, lemon juice, lemon zest and vanilla. Once thoroughly mixed, add sugar, flour and salt to fruit mixture in the baking dish.
Step 3
To create the granola topping, a separate bowl combine flour, granola, olive oil, salt and granulated sugar (if desired) until large crumbs form.
Step 4
Sprinkle the granola topping over fruit filling. Set the crumble on a foil-lined baking sheet and bake for 45 minutes, until the crumble is a shade darker and you see juices bubbling through the crumbs.
